Slow Cooker Garlic Pulled Beef Pasta

An easy meal perfect for busy people, this slow cooker garlic pulled beef pasta takes just 20 minutes of prep and cooks throughout the day. It's a fuss-free recipe that's ready to go straight after the school run.

Slow Cooker Garlic Pulled Beef Pasta

Cook time: 390 minutes

Servings: 4

Ingredients

  • 500 g casserole or brisket beef
  • 1 whole onion
  • 3 tsp minced garlic
  • 2 tsp basil
  • 2 tsp oregano
  • 1 tsp thyme
  • 1 pinch salt & pepper
  • 2 tbsp tomato puree
  • 1 tin chopped tomatoes
  • 250 g water
  • 1 whole red wine stock pot
  • 1 whole beef oxo cube
  • 100 ml single cream
  • 50 g grated parmesan
  • 1 bunch fresh basil
  • 300 g pasta

Instructions

  1. Add a drizzle of olive oil to a pan and brown off the beef for a few minutes on a high heat. This step is optional if you are short on time.
  2. To the slow cooker add the beef, onion, garlic, chopped tomatoes, tomato puree, stock pot, oxo cube, water, dried herbs, salt & pepper. Stir well.
  3. Cook on low for 6 hours.
  4. Once cooked, shred up the beef, add in the cream, parmesan & fresh basil, stir well and cook for another 30 mins.
  5. Whilst cooking place the pasta on to boil as per the packet instructions.
  6. Once the pasta is cooked add a ladle of pasta water & the pasta into the sauce then stir well until all of the pasta is fully coated.
  7. Serve with garlic bread & optional garnish of parmesan & fresh basil.
