Mediterranean Ground Beef Bowls With Lemon Tahini Sauce

Ingredients
- 0.25 cup lemon juice
- 0.33 cup olive oil
- 3 tablespoon tahini
- 2 tablespoon honey
- 2 tablespoon red wine vinegar
- 1 clove garlic
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 3 cloves garlic

- 1 orange bell pepper
- 0.75 cup cherry tomatoes
- 0.25 cup kalamata olives
- 0.5 red onion
- 1 tablespoon olive oil
- 0.5 red onion
- 3 cloves garlic
- 1 lb ground beef
- 1 orange bell pepper
- 0.75 cup zucchini
- 0.75 cup cherry tomatoes
- 2 teaspoon dried oregano
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 0.5 teaspoon ground black pepper
- 0.25 cup kalamata olives
- 0.5 cup feta cheese
Instructions
- Prepare the sauce by adding all of the sauce ingredients to a small blender.
- Blend the sauce until creamy and smooth. Taste and add water to thin as needed, then set aside.
- Mash your garlic and chop your veggies—zucchini, bell pepper, tomatoes, olives, and red onion.
- Add olive oil to a large pan over medium heat.
- Once the pan is hot, add the red onion and saute for 3 minutes.
- Add the mashed garlic to the pan and stir for about 15 seconds.
- Add in the ground beef, breaking it down into tiny pieces and stirring until cooked through.
- Add the bell pepper, zucchini, tomatoes and seasonings (oregano, cumin, paprika, salt and pepper). Continue to stir for another 5 minutes or so until all of the veggies have softened.
- Stir in the olives and feta cheese.
- Remove from the heat and divide between bowls.
- Drizzle the lemon tahini sauce on top and enjoy.
