Mediterranean Ground Beef Bowls With Lemon Tahini Sauce

Ingredients

  • 0.25 cup lemon juice
  • 0.33 cup olive oil
  • 3 tablespoon tahini
  • 2 tablespoon honey
  • 2 tablespoon red wine vinegar
  • 1 clove garlic
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 3 cloves garlic
  • 0.75 cup zucchini
  • 1 orange bell pepper
  • 0.75 cup cherry tomatoes
  • 0.25 cup kalamata olives
  • 0.5 red onion
  • 1 tablespoon olive oil
  • 0.5 red onion
  • 3 cloves garlic
  • 1 lb ground beef
  • 1 orange bell pepper
  • 0.75 cup zucchini
  • 0.75 cup cherry tomatoes
  • 2 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.25 cup kalamata olives
  • 0.5 cup feta cheese

Instructions

  1. Prepare the sauce by adding all of the sauce ingredients to a small blender.
  2. Blend the sauce until creamy and smooth. Taste and add water to thin as needed, then set aside.
  3. Mash your garlic and chop your veggies—zucchini, bell pepper, tomatoes, olives, and red onion.
  4. Add olive oil to a large pan over medium heat.
  5. Once the pan is hot, add the red onion and saute for 3 minutes.
  6. Add the mashed garlic to the pan and stir for about 15 seconds.
  7. Add in the ground beef, breaking it down into tiny pieces and stirring until cooked through.
  8. Add the bell pepper, zucchini, tomatoes and seasonings (oregano, cumin, paprika, salt and pepper). Continue to stir for another 5 minutes or so until all of the veggies have softened.
  9. Stir in the olives and feta cheese.
  10. Remove from the heat and divide between bowls.
  11. Drizzle the lemon tahini sauce on top and enjoy.
