Creamy Slow Cooked Leeks

Leeks are in season and cooking them low and slow is one of the best ways to enjoy them. Serve as a side with a roast or by themselves.

Creamy Slow Cooked Leeks

Cook time: 90 minutes

Servings: 4

Ingredients

  • 3 large leeks
  • 2 tbsp olive oil
  • 1 to taste salt
  • 1 to taste pepper
  • 200 ml double cream
  • 100 ml milk
  • 3 cloves garlic
  • 1 tsp nutmeg
  • 100 g cheese
  • 100 g cheese

Instructions

  1. Preheat your oven to 150 degrees Celsius.
  2. Chop the 3 large leeks and stand them upright in a dish.
  3. Drizzle the leeks with 2 tbsp of olive oil, and season with salt and pepper.
  4. Roast the leeks for 1 hour until soft.
  5. Add 200ml of double cream, 100ml of milk, 3 cloves of garlic, 1 tsp of nutmeg and half of the 200g cheese to a pan.
  6. Stir the mixture on a low heat for 5 mins then set aside.
  7. When the leeks are soft, cover them with the sauce.
  8. Top the leeks and sauce with the remaining 100g of cheese.
  9. Bake for 30 minutes until golden and crisp.
